FAT FOX MUSHROOMS
An extra special session for 2025 covering 4 hours ending with a workshop focusing on deriving flavour through various cooking & fermentation techniques to get the most out of wild ingredients & cultivated fungi. We will start with a Flavour Led Forage (snacks and tasters along the way) from Fat Fox Mushrooms (43-53 Markfield Road, London, N15 4QA) around Leyton Marshes starting at 2pm. After a 2 hour walk we will workshop some techniques together leaving with a ferment of your own and a cooking technique demonstrated to get the most out of some glorious cultivated funghi from the Fat Fox crew. During the session we will also enjoy a selection of my wild sodas, infusions and various tasty drinks.
