This fungus you do find in the wild on dead or dying deciduous trees, mainly beech. I have only seen it once in the wild and although it’s not protected it is rare to me so I leave the wild ones be and rely on the fungi farmers out there.

The Hericium genus have icicle like spines so some of the names for varieties in this species are pretty cool. Lions mane being the most well known at the moment given its medicinal status.

The batter mix is similar to a seafood batter mix and making a cream from the ingredients as listed below and shown in the video means you can get a nice crispy result by frying twice. First at 160C once well coated for 4 minutes until golden and again at 190C for extra crisp. Fermented mushroom seasoning was a must and my elderberry fire cider hot sauce mixed with a little mayo made the dip. Delicious. Thanks Robbie.

3 tbsp cornstarch

1 tbsp white flour

1g bicarbonate of soda

1 egg
