Two recipes in this video being sticky damson plums & a damson take on a mango chutney

STICKY DAMSON PRESERVED PLUMS

RECIPE

1kg plums

1/2 chilli

20g Ginger finely chopped

1 stick of cinnamon

1 star anise

2 cloves

200ml white wine vinegar

100g sugar

It’s really easy so start by removing the stones. Then I’m a pan add all the ingredients except the plums. Once boiling put the plums in for 2 minutes the remove and strain the liquid. The plums can be placed in jars whilst the sauce reduces until thick and bubbling vigorously. Allow this sticky sweet sharp liquid to cool and pour over the plums. Try not to make a mess…. Easier said than done.

DAMSON – CHUTNEY MANGO CHUTNEY STYLE

INGREDIENTS

3 handful of damsons – de-seeded

1/2 golden onion – diced

1 large carrot – diced

2 chillies

5 cloves garlic – chopped

Thumb of ginger – peeled and chopped

1 tsp cumin

1 tsp onion seed (wild substitutes like Jack by the hedge seeds are incredible but didn’t have at the time)

1/2 tsp salt

1/2 tsp pepper

200g sugar

PROCESS

Cook down and soften the onions, carrots & damsons after which put in the vinegar+fruit and allow to reduce. Then in another pan fry the chilli, garlic, onion seeds and cumin and put into the pot with the other ingredients and add the sugar, salt and pepper. Allow to reduce till thick and sticky. It will be ready when you run a spoon through the mixture to the bottom of the pan and you can see the bottom clearly for a couple of second as it rolls back together. Put it in a jar and should store nicely.
