Trumpet of the dead is my favourite name as it gets me thinking about the black horn/trumpet/funnel shaped fruiting fungus being played by the dead and a vortex into hell. Now despite the name it’s a choice edible and something somehow I haven’t found all that often - probably the difficulty to spot. I’ve found a number over the years but not as much as I have of late as you’ll notice I’ve been playing around with recipes a fair bit.

I simply love black uneven trumpet shapes with ever so slight ridges running down the stipe (stem) from the edge of the outside of the trumpet although tiny. It’s pretty hard to tell where the hollow stipe begins and cap stops before entering the ground… *pretty sure there’s a mouth piece with pursed lips and perfect embouchure for playing those trumpets. I was looking around mainly beech, it grows in association with (mycorrhizal) broad leaf trees and loves a bit of moss / makes it easier to spot.

Quick little taster here of a brownie recipe I’ve used for a while and I’ve been testing it and adapting it a little to get a very deep shroomy flavour. The woodsy deep flavour always made me want to put it with chocolate and I’ve been playing around with it a bit over the last weekend.

BROWNIE

* 250g vegan butter – melted, hot

* 600g granulated sugar

* 180ml cup non-dairy milk

* 6 teaspoons vanilla extract

* 240g white flour

* 180g unsweetened cocoa powder

* 1.5 teaspoon baking powder

* 1/2 teaspoon salt

* 340g dark chocolate chips

* 36 minutes at 180 – allow to cool and firm up

Melt butter and pour onto chocolate chips and sugar and mix till chocolate chips are partially melted. Add in the rest of the ingredients. Line a tray (25cm x 15cm) with baking parchment and bake. Depth of brownie is about 1 inch. Bake and allow to cool properly before slicing.
